Here are some great ideas to make life easier in the new year! Happy 2012 everyone!!

Hull strawberries easily using a straw.

Rubbing a walnut over scratches in your furniture will disguise dings and scrapes

Remove crayon masterpieces from your TV or computer screen with WD40.

Overhaul your linen cupboard, store bed linen sets inside one of their own pillowcases and there will be no more hunting through piles for a match.

Pump up the volume by placing your iPhone & iPod in a bowl. The concave shape amplifies the music.

Re-use a wet-wipes container to store plastic bags.

Add this item to your beach bag. Baby powder gets sand off your skin easily, who knew?!

Attach a Velcro strip to the wall to store soft toys.

Use wire to make a space to store gift wrap rolls against the ceiling, rather than cluttering up the floor.

Find tiny lost items like earrings by putting a stocking over the vacuum hose. Or place over Dust Buster

For those who can't stand the scrunching and bunching: how to perfectly fold a fitted sheet.

Forever losing your bathroom essentials? Use magnetic strips to store bobby pins, tweezers and clippers, behind a vanity door

Store shoes inside shower caps to stop dirty soles rubbing on your clothes. And you can find them in just about every hotel. Also great for using over shoes when looking at a model home (they ask you take off your shoes)

A muffin pan becomes a craft caddy. Magnets hold the plastic cups down to make them tip-resistant.

Bread tags make the perfect cord labels.

Microwave your own popcorn in a plain brown paper bag. Much healthier and cheaper than the packet stuff.

Bring toys, clothing (children and adult), shoes, accessories, purses, jewelry, men's ties, and costumes over to the church by 5:00 pm on Friday. If that time does not work for you, contact Jen L.
Please make sure clothes brought are in good condition, clean, have no broken zippers, no missing buttons, and no rips or stains.

We would like to welcome our new Relief Society Presidency. Patti O. is the new president, and her counselors are Vicki G. and Mindy S. Erin Z. is the new secretary. We are looking forward to working with these wonderful sisters who are so willing to share their time and talents with us.

We would also like to thank Sister Anita A. for the wonderful service she has rendered as our Relief Society President. She has been so mindful and caring of each sister in the ward, and the entire ward will truly miss her. But we wish her well on her new endeavors and we know she will bless all of those she associates with, just as she did us.

May Humanitarian Project

Humanitarian Project: Thanks to all who so generously donated toothbrushes in April for the humanitarian kits. For the month of May we are asking for tubes of TOOTHPASTE. They must be tubes, not pumps and must be 6-8 oz. If you watch the weekly circulars, their are some very good sales on toothpaste quite often. Thank you very much for anything you can give to this project. If you would like to donate toothpaste, please drop it off at MayAnne A.'s home or call her, for pick up.

Relief Society May Activity

Imagine a single food that is tasty, inexpensive, versatile, nutritious and easy to store.

Did BEANS come to mind? Beans are the foundation of France's cassoulet, Mexico's refried beans, Brazil's feijoada, the Middle East's hummus, Louisiana's red beans and rice, Cuba's black bean soup, Italy's pasta e fagioli, India's dahl and many more wonderful dishes from around the world.

Here's what we want to do for May, but we need VOLUNTEERS! If you return again and again to a favorite bean dish (it doesn't have to be fancy or international, just GOOD!) that your family loves and you would be willing to share it with the sisters, please email Anita Andrews at acandrews@juno.com.

Here are our goals for this May meeting:
1) Help sisters learn to use beans from their long term food storage.
2) Have a fun evening of tasting, getting recipes and instructions, sharing and visiting in
several homes in the ward. (Sisters will come and go in open house style).
3) Have a couple of completed 72-hour kits on display at each volunteered home for
learning and inspiration!

We need volunteers to be willing to do ONE OR MORE of the following:

1) OFFER HOMES for welcoming sisters in a sort of "open house format"
2) BRING prepared favorite "hit" bean dishes along with copies of the recipe
3) DISPLAY their completed 72-hour kits in backpacks, rolling suitcases, etc.

April Relief Society Enrichment

We are really excited for our April Enrichment Evening on Thursday, April 29 at 6:30. Rachael Y. and her mother will teaching us about nutritious, economical meals. The following outline is what is planned for that evening, and it sounds like there will be something there that everyone can use.

25 Minutes: Nutritious eating!

1. Closer to nature, healthier it is.
2. “Healthy shelf” in pantry and fridge for snacking.
3. Fast and nutritious meal idea.
4. Summer eating, nutrition on the go!
5. Nutrition and the word of wisdom.

25 Minutes: Economic meals!

1. Basic tips for saving money on groceries.
2. Recipes for low cost, high taste, meals, and meals that use odds and ends.
3. Waste not, want not, how much food should you really be buying?

15 Minutes: Crock Pot and Freezer meals

1. Recipes
2. Best tasting (no freezer burn, or overcooking)
3. Crock pot cooking tips

Refreshments:

1. One nutritious eating snack.
2. One economic meal
3. One Crock Pot dessert

An Evening with Eliza R. Snow

Rock Canyon Care Center Program

Today we had a wonderful experience at the Rock Canyon Care Center. Our dear friend and neighbor, Marilynn S., is a resident there while she is receiving treatments for cancer. Vicki G. was a great emcee and coordinated the program through stories and jokes--if you didn't know it already, she is VERY funny! Ali E. played a beautiful piece on the piano, Karla and Rebecca H. danced and Aaron M. played a violin solo. Camille B. sang a song that was one of her grandfather's favorites, and many of the residents joined in. Tara E. and Maryanne A. told stories that were both touching and funny. Other sisters came just to show support and to let Marilynn know how much we love and miss her. It was a great day!

Hygiene Kits

Our ward is planning to make hygiene kits to donate to Church Humanitarian Services. Each month for 5 months we will ask for donations of certain items for the kits. After all items are accumulated, the kits will then be assembled. For the month of March we are asking for donations of UNBREAKABLE COMBS WITH NO SHARP HANDLES. If you would like to donate combs, please drop them off at MaryAnne A.'s home or call her, for pick up.

March is Full of Activities and Service

We would like to thank everyone who has helped with our "Quilts for Haiti" project, especially Debbie P. She has put in an almost Herculean amount of time and effort into this project. The last quilt is being tied at her home today, and there are still a few quilts left to bind, so if you are able to help, I know any time or talents you are able to offer would really be appreciated!

We are also planning to go to the Rock Canyon Care Center on Saturday, March 20 at 10:30 AM, to put on a program for the residents. This is a surprise for one of our own, Marilyn S., who is a resident there at this time. It would be wonderful to have as many sisters from the ward as possible come to visit the residents and Marilyn, and to support the sisters who are performing.

Relief Society Quilts for Haiti Night

We had a wonderful evening of quilting and visiting on Tuesday. Thanks to the hard work of so many, we were able to finish 7 quilts to be sent to the citizens of Haiti who were so devastated by the terrible earthquake that struck their country last month. We have 3 more quilts that are also ready to be quilted, so hopefully we will be able to get together soon and finish those quilts, too. Thanks again to everyone who helped make the evening so enjoyable and such a success.

Relief Society Humanitarian Night
February 16, 2010
6:00-8:00 pm

We will be making quilts for Haiti that evening. SLC Humanitarian Services told us that this is what is needed most at this time to help the Church in sending aid to Haiti.
Please come for as long as you can to help us work on the quilts. We will also be needing sisters to take the quilts home and bind them.

We will plan on working together as we visit and get to know each other better. There will also be light refreshments.
If you need a nursery that night, please contact a member of the Presidency or Debbie P.

We are also in need of donated fabric. If you have any, please contact Debbie P. as soon as possible.
If anyone wishes to donate money to Haiti Hurricane relief through the Church, the Bishop suggested that you use a donation slip and list "Humanitarian" as the category for your donated funds.

Help for Haiti

Dear Sisters,

Vicki G.'s daughter's ward has been collecting supplies for hygiene kits going to Haiti. They are still in need of toothbrushes and combs. The toothbrushes need to be in packages of four or less, since they put four in each kit and the toothbrushes need to be packaged. If you would like to donate please get supplies to Vicki by Tuesday (Jan. 26th). Thank you so much!

Stake Relief Society General Meeting

The Stake Relief Society Meeting will be held January 23rd at 10 a.m. There will be a luncheon. We hope you can attend, they are always great!

For this meeting, the Stake Relief Society Presidency has asked us to share with them any good service acts that the sisters in our ward have done or are doing. We know good things have been going in our ward that we haven't heard about. They don't need to be huge acts. Just simple, kind acts of service would be great. (Humanitarian, Visiting Teaching, etc...) Let us know about anything you have done, or anything that you know about. Thank you so much!

Alliance for Unity "Help Your Neighbor Day" Food Drive, Saturday, December 5, 2009

Members of the Church in Utah are encouraged to join with those of many other faiths in donating non-perishable food items to Utah Food Bank Services for this year's "Help Your Neighbor Day" scheduled for December 5, 2009. Paper sacks will be sent out in local and daily newspapers, although any plastic or paper bag may be used. High protein items such as canned meats, fish, or peanut butter are especially needed.

Store drinking water for circumstances in which the water supply may be polluted or disrupted.

If water comes directly from a good, pretreated source, then no additional purification is needed; otherwise, pretreat water before use.

Store water in sturdy, leak-proof, breakage-resistant containers. Consider using plastic bottles commonly used for juices and soft drinks.

Keep water containers away from heat sources and direct sunlight.

INGREDIENTS:

7 c Whole wheat flour, divided

2 to 3 c White flour

2 to 3 tbsp dry yeast

1 c dry Powdered milk

3 c warm water

1 c oil

½ c honey or sugar

4 large eggs

2 tsp salt

PREPARATION:

* In a large mixing bowl, mix 5 cups whole wheat flour, yeast, and dry milk

* Add water, oil, and honey, and mix well for 1-2 minutes

* Cover, and let dough rest for 10 minutes, allowing the yeast to become active

* Add remaining 2 cups of whole-wheat flour, eggs, and salt, mix

* Add white flour, 1 cup at a time until dough beings to pull away from sides of bowl

* Knead for 5 to 6 minutes.

* Dough should be soft and manageable. Stiff dough produces dry, heavy rolls, so if dough stiffens while mixing, drizzle a little warm water over as you knead it.

* Dough may be used immediately or stored for several days in the refridgerator

* If using immediately, lightly oil hands and counter top and shape or roll out into rolls

* Cover loosely, and allow to rise until very light

* Bake in a 350º preheated oven for 18 to 20 minutes. Do not over-bake!

* Yield: 5 dozen large rolls.

Mexican Casserole - Food Storage Style

Cowboy Delight - Mexican Casserole

Ingredients:
1 family size package Kraft macaroni and cheese
(I used 3 C macaroni, 1/2 C powdered cheese, 6 tsp butter, 6 tsp of powdered milk)
½ lb. lean hamburger (or turkey), browned
½ onion, chopped (can use dehydrated onion flakes)
1 can chili with beans
1 can tomato soup
1 T. chili powder
1 can corn
cheddar cheese, cubed (optional)
fritos (optional)

Directions:
Preheat oven to 350º. Cook kraft dinner according to directions in large pot. Meanwhile, brown hamburger with onion. Add to kraft dinner with remaining ingredients. Heat through. Pour into casserole dish and top with fritos. Cover and bake 30 minutes

My husband actually said he thought the noodles done this way was a little yummier. I also didn’t have a can of chili with beans- so I just put in a can of red beans and chili seasoning instead. It worked out just fine. Oh and also, the butter in the macaroni and cheese can be substituted with 1/4 C of butter powder - I just skip the butter altogether, but once I gave Jodi mac and cheese without butter and she spit it out- so in case you wanted to know- you can use powdered butter in mac and cheese too. This meal could also be made without meat and cheese for a “completely” shelf stable ingredients meal.

Carrot Cake Cookies

Ingredients
(Makes about 25 sandwiches)

1 cup packed light-brown sugar
1 cup granulated sugar
1/2 pound (2 sticks) unsalted butter, room temperature
2 large eggs, room temperature
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
2 cups old-fashioned rolled oats
1 1/2 cups finely grated carrots, (about 3 large carrots)
1 cup raisins

Cream Cheese Frosting (see below)

Directions:
Preheat oven to 350 degrees.

Line two baking sheets with Silpat baking mats or parchment paper, and set aside.

In the bowl of an electric mixer fitted with the paddle attachment, combine sugars and butter; beat until light and fluffy, 3 to 4 minutes. Add eggs and vanilla, and beat on medium speed until well combined.
In a large bowl, sift together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger; stir to combine.

Gradually add flour to butter mixture; mix on a low speed until just blended. Mix in oats, carrots, and raisins. Chill dough in refrigerator until firm, at least 1 hour.

Using a 1/2-ounce ice-cream scoop, scoop dough onto prepared baking sheets, leaving 2 inches between cookies. Transfer to oven, and bake until browned and crisped, rotating pan halfway through baking to ensure even color, 12 to 15 minutes. Transfer to a wire rack to cool. Repeat baking process with remaining dough.

Once cooled completely, use an offset spatula to spread about 2 teaspoons of cream-cheese filling onto a cookie. Sandwich together with a second cookie. Repeat with remaining cookies. Store in an airtight container for up to 3 days in the refrigerator.

*Cream Cheese Frosting:

Ingredients
Makes about 2 cups
8 ounces cream cheese, room temperature
8 tablespoons (1 stick) unsalted butter, cut into pieces, room temperature
1 cup confectioners' sugar
1 teaspoon pure vanilla extract

Directions:
Place cream cheese in a medium mixing bowl. Using a rubber spatula, soften cream cheese. Gradually add butter, and continue beating until smooth and well blended. Sift in confectioners' sugar, and continue beating until smooth. Add vanilla, and stir to combine.

Besides wanting to use more of the dry staples that I always have on hand, I chose this recipe because one of the reviewers mentioned that the cookies taste best when chilled for a few days. I love being able to use my long-term food storage in normal recipes!

Powdered Milk

Foods made with powdered milk will have fewer calories and less cholesterol than those made from whole milk.

Adding additional milk to the recipe will enhance the nutritive value of the recipe.

In any recipe calling for milk, simply add water for the milk called for in the recipe.

Recipes call for many types of milk. All the following can be made from powdered milk.

Whole milk
1 cup water
1/3 cup powdered milk

Evaporated milk
1 cup water
2/3 cup powdered milk

Whipped evaporated milk
Makes 3 cups
1 cup evaporated milk
2 Tbsp lemon juice
Thoroughly chill evaporated milk. Add lemon juice and whip until stiff. Sweeten and flavor as desired.

Condensed milk
1/2 cup hot water
1 cup sugar
1 cup powdered milk
Blend thoroughly in a blender. Can be stored in refrigerator or frozen.

Buttermilk or sour milk
1 cup water
1/3 cup powdered milk
1 Tbsp vinegar or lemon juice

Drinkable powdered milk
To improve the flavor of powdered milk, mix it half and half with 2% or whole milk.
Another suggestion would be to try adding a little sugar or vanilla to enhance flavor.
Let chill several hours before drinking.

Buttermilk Cornbread

Serving Size: 9 servings

Prep Time: 10 minutes
Cook Time: 30 minutes

Ingredients:

1/2 cup butter
2/3 cup white sugar
2 eggs
1 cup buttermilk (I make my own with 1 T. lemon juice per 1 cup milk)
1/2 tsp. baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 tsp. salt

Directions:

Preheat oven to 375 degrees. Grease an 8 inch square pan.
Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.

This was sooooooo delicious! My kids started calling it corn cake and ate two helpings each. Much better than a cornbread mix and a great way to rotate through your food storage cornmeal. Only took 10 minutes to prepare and 30 minutes to cook!

Breadsticks or Pizza in 30 Minutes

30 Minute Breadsticks OR No-Fail Deep Dish Pizza Crust

(If it is too thick for your family, you can either half the recipe or put one full recipe onto two cookie sheets)

2 1/2 C. Medium Hot Water

5 tsp. SAF Instant Yeast*

2 Tbsp. Sugar

3 Tbsp. Oil

1 tsp. Salt

6 C. Flour (you can do half all-purpose and half white wheat or 100% whole wheat)

1/2 Cube of Butter

Lowry’s Garlic Salt with Parsley (to sprinkle on the breadsticks)

Directions:

1. Pour medium hot water in mixing bowl. Sprinkle yeast on top and allow to dissolve.

2. Add sugar, salt, and oil. Gradually add approximately 6 cups of flour.

3. Melt 1/2 cube butter on cookie sheet in oven as it is heating to 400 degrees and melt in oven.

4. Place dough on cookie sheet and press to fill pan, make sure butter gets on top of the dough.

5. Allow to double in size (About 10-15 minutes)

6. Cook for 10 to 12 minutes or until desired browning is accomplished.

7. Cut into strips, sprinkle garlic salt and parsely or top with favorite pizza toppings.

* When using regular yeast change amount to 2 Tbsp.

When you press the dough onto the pan with the butter it will force some of the butter to go on top of the dough. Just make sure it covers the dough. Also, I bake the pizza for about 5 minutes once the toppings are on.

Olive Garden Salad

Olive Garden Salad Dressing:
½ c. mayonnaise
1/3 c. white vinegar
1 tsp vegetable oil
2 Tb. corn syrup
2 Tb. Parmesan cheese
2 Tb. Romano cheese
¼ tsp garlic salt – or one clove garlic, minced
½ tsp Italian seasoning
½ tsp parsley flakes
1 Tb. lemon juice

Salad:
1 large head romaine lettuce
slices red onion
black olives
2-4 banana peppers
2 small tomatoes, quartered
½ c. croutons
freshly grated Parmesan cheese
For homemade croutons:
4 slices sandwich bread
1 clove garlic, minced
3 Tb. butter
salt and pepper
dried parsley flakes

Mix all dressing ingredients in a blender until well mixed. If this is a little too tart for your own personal tastes, add a little extra sugar.

Chill one salad bowl in freezer for at least 30 minutes. Put lettuce in bowl. Place on top of lettuce red onions, black olives, banana peppers, tomatoes, and croutons. Add some freshly grated Parmesan cheese if you like, and add plenty of Olive Garden Salad Dressing on top.

For the homemade croutons:
Cut off crusts of sandwich bread, and cut bread into cubes. Melt butter in small saucepan and add minced garlic. Toss sandwich cubes in the butter and spread out in a pan. Sprinkle salt and pepper and parsley flakes to taste. Bake for 15 minutes at 350°, turning half way through baking.

"This a delicious salad recipe that my friend Katherine passed on to me. Plan on making the croutons yourself. They are incredibly easy. I'm serious. And completely 100% worth the extra 4 or 5 minutes of prep. I used some focaccia bread that I bought that was a few days old. This bread that didn't taste fresh anymore made fantastic croutons. (Any bread would work - artisan bread, french bread, ciabatta, and of course sandwich bread... I've even tried homemade english muffin bread and it was great!)

Chicken Poppy Seed Salad

Spinach leaves
Romaine leaves
Grilled chicken, sliced (grill with lots of lemon pepper seasoning)
Red onion, sliced thinly
Crispy bacon, crumbled
Shredded mozzarella cheese
Toasted almonds (or you can sugar the almonds. Put sliced almonds in a pan with lots of granulated sugar (about equal amounts). Cook on medium heat until sugar melts, coating the almonds as they brown.)

The best part... The Dressing:
1 1/3 cup sugar
2 tsp salt
2 tsp dry mustard
2/3 cup red wine vinegar
3 Tb Maui or Vidalia onion, chopped
2 cups canola oil
3 Tb poppy seeds

Mix the first 5 ingredients in a blender, then slowly add the oil, blending until thick. Stir in poppy seeds. Toss all ingredients together with generous amount of dressing before serving.

*This makes a lot of dressing! If you need a really big salad for a party then start with a large bunch of spinach, large head of romaine, 4 chicken breasts, 1 lb bacon, etc. I rarely make a salad that big so that is why there are no "amounts". So have fun with it - you're going to love it!

Sugarless Apple Pie

Ingredients:
6-8 apples, sliced
One 12 oz can frozen apple juice concentrate
2 T cornstarch
Dash of cinnamon or cardamom (optional)
2 pie crusts, uncooked

Directions:
Line pie tin with pastry, fill with apples.
Combine apple juice with cornstarch, then cook until thick.
Pour over sliced apples.
Top with crust. Bake 10 min at 375°, then 2 hours at 275°.

White Bean Chicken Chili

INGREDIENTS:
1 lb. Navy Beans (rinse and soak overnight or at least 6-8 hours and drain)

5 cups chicken stock

4 Tbs. butter

1 Tbs. minced garlic

1/2 cup onion, minced

1 1/2 cups chopped green chiies (fresh or canned)

1 lb. boneless, skinless chicken breast (raw) cut into bite sized chunks

1 Tbs. ground cumin

1 Tbs. dried oregano

1 tsp. ground black pepper

1/2 tsp. ground white pepper

Pinch of red pepper flake (optional)

1/2 bunch fresh cilantro, chopped

PREPARATION:
Place rinsed, soaked and drained beans in stock pot. Add chicken stock and bring to a boil over high heat. Let boil for 30 minutes or until beans become tender.

Meanwhile, melt butter in a saucepan over medium heat. Add garlic, onion and chilies and saute for 5 minutes. Add chili mixture to the pot of beans. Add chicken and the rest of the ingredients, lower heat to medium and cook for approximately 1½ hours, stirring occasionally. Serve with shredded cheese and sour cream if desired.

Serving Size: 2 large glasses

Prep Time: 5 minutes (if you make a bunch of baggies ahead of time)

Ingredients (if you skip the sugar, they’re actually REALLY healthy):
3/4 cup of frozen strawberries
1/2 cup of frozen blueberries
1/2 cup of frozen peaches or rasberries
1cup of powdered milk prepared
5 ice cubes of fat-free strawberry yogurt (or any other kind)
1/4 of sugar if you think it needs it (I use splenda here and there)

Directions:
Pour milk into blender
Add fruit, blend
Add yogurt cubes, blend
Add sugar, blend
Eat with a spoon, or drink with a straw

Directions to prepare a bunch of smoothies for the go ahead of time:
Buy a 8-10 ziploc baggies
Buy bags of your favorite frozen fruits (I did 2 strawberry, 1 peach, 1 blueberry)
Divide up your fruit into the baggies
Divide a large container of yogurt into ice cube containers and freeze
Once frozen place 5 yogurt cubes into each ziploc bag
Put bags into the freezer and use them up as you wish, all you’ll need to add is the milk and sugar.

Whole Wheat Chocolate Cake (Super Moist)

Storage Ingredients:
1 1/2 cups whole wheat flour
3 tablespoons cocoa
1 teaspoon baking soda
1/2 cup white sugar
1/2 cup brown sugar
1/2 teaspoon salt
5 tablespoons oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water

Mix all the dry ingredients together in a bowl. Add the wet ingredients and mix until smooth. Pour into a 9 inch by 9 inch baking pan, two inches deep. (The pan does not have to be greased.) Bake at 350 degrees for about 30-40 minutes. Test with a fork for doneness.

Notice that there aren’t any eggs? I have no idea how it works but this recipe makes one surprisingly moist and delicious chocolate cake. I always double the recipe and use two 8 1/2″ round pans. When the cakes are completely cooled or even slightly chilled after being refrigerated, I frost between the layers and the top only with a chocolate whipped cream frosting. Then I freeze the cake at least overnight and take it out about an hour before we’re going to serve dessert.

CHOCOLATE WHIPPED CREAM FROSTING
Fresh Ingredients:
1 pint whipping cream

Storage Ingredients:
1/3 cup cocoa

Homemade Whole Wheat Noodles

1 C whole-wheat flour

1 large well-beaten egg

2 T milk

1/2 tsp salt

Directions:

Combine flour, egg, milk and salt to make a stiff ball of dough. On a lightly floured surface roll dough until very thin, to about 18x20 inches. Let dry about 1-1/2 hours. Cut into 1/2 inch strips with a pizza or pastry cutter. Store in container that is not airtight.

Drop into boiling soup or water. Cook 8 to 10 minutes. Makes 8 ounces or 3 cups and the cost is about eleven cents.

Bean Soup Mix

BEAN MIX:
1 C Dried yellow split peas
1 C Dried Grean split peas
1 C Pearl barley
1 C Dried Black-eyed peas
1 C Dried Small lima beans
1 C Dried Navy beans
1 C Dried Great northern beans
1 C Dried Pinto beans

Combine bean mix ingredients. Divide into six batches, 1 1/2 cups each. Store in airtight containers.

SOUP:
1 1/2 qts Water
1 lg Onion, chopped
1 lg Carrot, chopped
2 tsp Chili powder
1 1/4 tsp Salt
1/4 tsp Pepper
1/8 tsp Ground cloves
1/2 lb Fully cooked smoked sausage, sliced
1 can (28 oz) Diced tomatoes, undrained
1 tbsp Lemon juice

TO MAKE ONE BATCH OF SOUP:

Place 1 1/2 cups bean mix in a Dutch oven or soup kettle; cover with water by 2 inches. Bring to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour.
Drain, discarding liquid.
Return beans to kettle; add 1 1/2 quarts water. Bring to a boil. Reduce heat; cover and simmer for 1 1/2 to 2 hours or until beans are tender.
Add onion, carrot, chili powder, salt, pepper and cloves. Return to a boil. Reduce heat and simmer, uncovered, for 30 minutes.
Add sausage, tomatoes and lemon juice; simmer 15 - 20 minutes longer.

Yield: 9 cups of mix (six batches of soup--each batch makes 2 1/2 quarts and serves 8-10)

Granola Bars

1/2 cup brown sugar
1/2 cup corn syrup
1/2 cup peanut butter
1 tsp. vanilla
2 cups oats
2 1/2 cups rice krispie cereal
optional: chocolate chips, almonds, raisins, etc.

Start by putting the brown sugar and corn syrup on the stove to boil. While you're waiting, mix the oats and cereal together in a bowl and line a 9x13 pan with wax paper. When your mixture boils, remove from heat and add peanut butter and vanilla, stirring until combined. Add to the cereal and oats and stir until the oats and cereal are covered by the peanut butter mixture. If you are adding any extras, wait a few minutes until it's not so hot to stir them in.
Dump the mixture into the pan and spread out evenly with your fingers. Wait 15-20 minutes, and then slice with a pizza cutter.

Whole Wheat Banana Choc Chip Muffins

1/2 cup butter (1 stick or 4 ounces)
1/2 cup packed light or dark brown sugar
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp vanilla extract
1 1/2 cups mashed ripe banana (about 3 bananas)
1/4 cup honey
2 large eggs
2 cups whole wheat flour
2/3 Cups chocolate chips

Preheat the oven to 350. Line or grease a 12 cup muffin pan. I used my Demarle mini muffin pan.
Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg, and vanilla in a medium bowl until smooth. Add the banana, honey and eggs, beating until smooth. Add the flour and chocolate chips, stirring until smooth. Divide batter into the muffin cups, they'll be nearly full.
Bake the muffins until a cake tester inserted in the center of one comes out clean, 23-28 minutes. Remove from oven and after a couple of minutes transfer the muffins to a rack to cool.

These muffins are moist, and pleasantly dense. I love the combination of bananas and chocolate, reminds me of a banana split! My children gobbled them up! So good and good for them with all that whole wheat flour! Yum!!
